NUNM’s School of Undergraduate Studies is seeking an adjunct academic faculty member to develop and teach the Nutrition Capstone course.

Adjunct faculty members perform instructional duties and responsibilities in accordance with the philosophy, mission, policies, and procedures of the University and appropriate to the individual assignment. The relationship of the faculty member to the student is one of teacher, mentor and facilitator of learning.

NOTE: This is a face to face course at the NUNM campus in Portland, Oregon

One of the definitions of the word “capstone” is a crowning achievement.  This course is meant to provide the student an opportunity to perform a final research or community/service project that he/she considers the crowning achievement of his/her integrative health science program. Students are expected to draw from their coursework in their respective program, personal experience and research or community/service work conducted outside the classroom. Students will receive mentorship throughout the term as well as peer-support. At the end of the term, students will complete a paper and/or put together their program portfolio, and/or some other, equivalent project (to be approved by the dean), and present a 10-minute oral presentation to their peers.

Outcomes. At the end of this course, students will be able to:

  • Discover links between and among courses
  • Apply classroom learning to a hands-on, real-world project
  • Demonstrate effective research or project planning techniques
  • Communicate the outcomes of the project effectively in writing and verbally


Applicants must have education, experience, skill and knowledge in the area they will be teaching. Master’s degree required, doctoral degree preferred. This is a face to face course so the applicant must live in our within commuting distance to Portland, Oregon, USA.
