NUNM Nutrition alumna shares chia pudding recipe on KATU’s Afternoon Live

Sophia Malek, founder of Bad Nutrition Chia Pudding, prepared her Vegan Lemon Curd and Chia Pudding Brunch Trifles With Grape Nut Topping.

NUNM alum Sophia Malek appeared on Portland-based television station KATU’s show “Afternoon Live” on April 30 to prepare a recipe with host Hannah Olsen.

Malek, a culinary nutritionist who earned an M.S. in Nutrition from the National University of Natural Medicine in 2016, made Vegan Lemon Curd and Chia Pudding Brunch Trifles. She made the recipe using premade chia seed pudding from Bad Nutrition, a company she founded in 2022.

Recipe: Vegan Lemon Curd and Chia Pudding Brunch Trifles

“The perfect brunch to impress with limited time”

Ingredients:

1 container Bad Nutrition Lemon Curd Chia Pudding

1 Serving of Olive Oil Sautéed Grape Nuts (below)

1 container of blueberries, raspberries or blackberries

Mint to garnish

Olive Oil Sautéed Grape Nuts
(Makes enough for two trifles)

1 tbsp olive oil

1/2 cup grape nuts

1 tsp cane sugar

1/4 tsp kosher salt

Zest of 1/4 lemon

In a pan, sauté together 1 tsp of olive oil, sugar, kosher salt and grape nuts on a medium high heat until golden brown and crisp. Turn off the heat and add the lemon zest while warm, stir to combine and serve in a glass layered with chia seed pudding, lemon curd and fresh fruit
