NUNM nutrition graduate Kate Stoddard (’17) and her company Orchestra Provisions won the Trailmix competition at Boise Startup Week this month.
Stemming from her research on iron deficiency anemia while studying for her master’s, Stoddard’s interest in insect consumption led her to found Orchestra Provisions (“orchestra” is the name for a group of crickets). During her time at NUNM, Stoddard learned about the high iron content in insects like crickets, and how eating these critters could reduce anemia in humans. On top of those benefits, cricket consumption can have a positive impact on food-security and environmental health.
Orchestra Provisions produces spice blends that use dried cricket powder as an ingredient, and are sold in markets throughout Idaho. Read more about her future plans for her startup here.
